Grilled Rock Lobster

Ingredients
50g unsalted butter, softened
small handful finely chopped parsley
2 cloves garlic, finely chopped
salt and freshly ground black pepper, to taste
1 live 800g southern rock lobster
1⁄4 cup extra virgin olive oil
Method
Heat the grill. Next, make a flavoured butter by placing the butter, parsley, garlic, salt, and pepper in a bowl and mix well using a fork. Set to one side. Split lobster in half lengthwise and break off legs. Place the lobster halves, shell side down on a baking tray. Use the back of the knife or cleaver to crack the legs. Put them on the sheet with the shells, drizzle with olive oil, and season with salt and pepper.
Place the lobster, flesh side down on the hottest part of the grill. Add the legs. Cook for 2-3 minutes. Turn the lobster. Slather the lobster with the flavoured butter and cook for a further 3-5 minutes. Remove from heat. Allow to rest for several minutes. Serve with salad and crunchy fresh bread.
